INGREDIENTS
  • 60 g walnuts
    70g almonds
55g almonds, chopped to resemble quick oats

  • 50g hazeltnuts
    50g sunflower seeds
    55g flaxseed, coarsely ground

  • 75g honey
    50g coconut oil, melted
    30g flaked coconut

  • 1 tsp vanilla
    Pinch of salt
    1 tsp cinnamon

  • 1 tsp turmeric powder
    ¼ cup antioxidant mix (optional)

GUIDE / INSTRUCTIONS
  • Step 1: Pre-heat oven to 150 degrees, fan forced.

Line a large baking tray, alternatively line two trays.

You need a large flat surface so the granola can evenly cook.

  • Step 2: Chop all the nuts and seeds using a food processor (a knife works just as well), remembering to finely chop the smaller amount of almonds.

Grind the flaxseed, and combine everything in a large bowl.

Add in the cinnamon, turmeric and pinch of salt.

  • Step 3: Melt the coconut, honey and vanilla together.

Pour over nut mixture and stir until well combined.

Tip the granola mixture onto your prepared tray and spread out evenly.

Bake for 20 minutes then stir the mixture up on the tray.

Bake for a further 10 minutes, keep an eye on it as it can start to turn quickly.

If you like your granola a bit darker bake for a further 5 minutes. Leave the tray to cool in the oven.

Once your granola is completely cold, break up and large chunks and store in an air tight container.
