Gluten Free & Dairy Free Chocolate Peppermint Balls…. What more could one ask for..?
This recipe is extremely easy, even the kids can help!
INGREDIENTS
1.5 cups of raw cashews, soaked in water for 3 hours
1 cup raw almonds
1/2 cup coconut
18 Medjool dates, pit taken out and soaked in hot water for 20 minutes
3-5 drops of Doterra Peppermint oil depending on your preferred taste
A dash of water
GUIDE / INSTRUCTIONS
Step 1: Put almonds and coconut in a blender and blend until desired consistency has been reached
Step 2: Add dates, cashews and peppermint oil and blend until desired consistency. Use a few drops of water as needed to help the mix combine together
Step 3: Put the mix into the fridge for a hour to firm up to make rolling easier. Roll balls into desired ball size
Step 4: Melt one bag of Vego Melts over a double boiler
Step 5: Once chocolate is nice and runny, roll the balls through the chocolate and tap off any excess chocolate. Put the chocolate coated balls in a container with a lid and return them to the fridge and eat as desired. Best served straight from the fridge. Enjoy!
